Northern hemisphere autumn celebrates International Honey Month in September and shines a light on nature’s original sweetener. It raises awareness of the importance of bees and honey as a natural and beneficial sweetener.

Total Activity or TA is a method of rating used to measure the anti-microbial quality of honeys produced from Western Australia; the higher the Total Activity, the greater the anti-microbial and anti-bacterial strength.
The anti-bacterial activity of honey is measured from natural enzymes and chemicals in the honey. Any honey with a TA greater than 10+ may have beneficial anti-microbial properties and these properties become more effective as the Total Activity level increases.

INGREDIENTS
1 cup plain whole-milk Greek yogurt
2 tbsps smooth natural almond butter
2 tablespoons Fewster’s Farm Honey
2 tablespoons chia seeds
1 tablespoon vanilla extract
1 ½ teaspoons ground cinnamon
1 teaspoon grated orange zest
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon salt
2 cups unsweetened milk
2 cups old-fashioned rolled oats
½ cup shredded carrot
¼ cup raisins
¼ cup unsweetened shredded coconut
¼ cup chopped pecans or walnuts
⅓ cup low cream cheese, softened

METHOD

STEP 1
Stir together 1/4 cup yogurt, almond butter, 1 tablespoon honey, chia seeds, vanilla, cinnamon, orange zest, ginger, nutmeg and salt in a medium bowl until smooth. Gradually stir in milk until well combined. Fold in oats, carrot, raisins, coconut and 3 tablespoons pecans (or walnuts). Cover and
refrigerate for at least 8 hours and up to 4 days.

STEP 2
When ready to serve, stir together cream cheese and the remaining 3/4 cup yogurt and 1 tablespoon honey.

STEP 3
Spoon 1/2 cup oat mixture in each of 4 jars; spread about 2 tablespoons cream cheese mixture each layer of oats. Repeat the layers once. Top with the remaining 1 tablespoon pecans and lightly sprinkle with cinnamon.
