From the Bee Keeper…

We have been busy moving our bees to the ancient and pristine Jarrah Forests of the Darling Ranges just south of Perth.

The trees are flowering and the warm weather means we are looking forward to a good harvest of Jarrah Honey.

Fewster’s Farm Jarrah Honey is delicious and nutritious and tastes the way Mother Nature intended.

Honey is Mother Nature’s natural sweetener and has a low Glycemic Index. Low Glycemic Index foods release energy slowly so you don’t get the sugar spikes and crashes caused by processed sugars.
Here are some tips for substituting honey for sugar.

1. Use less honey than sugar: Because honey is naturally sweeter than sugar, reduce the amount of honey. As a general guide, for every cup of sugar, substitute 1/2 to 2/3 cup of honey.

2. Reduce the liquids: Since honey is already liquid, reduce the total amount of liquids in the recipe to counter the extra liquid from the honey. As a guide, for every 1 cup of honey used, reduce other liquids by a quarter cup.

3. Reduce the temperature: The higher sugar content in honey means it caramelises and burns faster than sugar. As a general rule, lower the temperature of the oven by 5 degrees Celsius and check more frequently.

4. Add a small amount of Bicarbonate Soda: Honey is naturally acidic, the bicarbonate soda balances out the acidity. As a rule, 1/4 teaspoon for 1 cup of honey.

Honey Mint Virgin Mojitos
INGREDIENTS:
FOR THE HONEY LIME MINT SIMPLE SYRUP:
1 cup lime juice
¾ cup Fewster’s Farm Honey
40 leaves mint chopped
FOR THE VIRGIN MOJITO:
5 leaves mint muddled or chopped
2 -3 tbsp Honey Lime Mint Simple Syrup
Topped up with sparking water
Lime wedge
ALCOHOLIC OPTION:
1.5 to 2 ounces white rum

METHOD

STEP 1
Prepare the Honey Lime Mint Syrup:
Heat all of the ingredients for the Honey Lime Mint Syrup in a saucepan and bring to a full boil. Immediately remove from heat and let stand until cooled to room temperature. Strain the mint leaves through a fine mesh strainer, discard the mint leaves, and refrigerate the syrup in a sealed jar until ready to use.

STEP 2
Prepare the Mojitos:
To prepare one cocktail, fill a glass with ice, and chopped (or muddled) mint leaves. Add 2 to 3 tablespoons (to taste) of the honey lime mint syrup, 2 ounces of white rum (if using), and fill the remainder of the glass with sparkling water. Stir well and squeeze fresh lime juice over the cocktail before serving.

Mango, Almond and Honey Breakfast Smoothie
INGREDIENTS:
1 mango
400ml skim milk
1/2 cup low-fat natural yoghurt
2 tbsp almond meal
1 tbsp Fewster’s Farm Honey
Ice cubes

METHOD
.

STEP 1
Peel and chop mango and place in a blender with skim milk, low-fat natural yoghurt, almond meal, honey and a few ice cubes.

STEP 2
Blend until smooth. Divide between 2 glasses.

Milk and Honey Iced Coffee
INGREDIENTS:
1/4 cup of coffee (your preference)
1 tsp Fewster’s Farm Honey
1/2 cup milk (your preference)
1/4 tsp vanilla
6-8 Ice cubes

METHOD
.

STEP 1
Brew your coffee, you need about 1/4 cup of espresso. Stir the honey into the hot espresso to dissolve. Add the milk and vanilla and stir to combine.

STEP 2
Place the ice cubes in a shaker and pour the coffee and milk mixture over the ice. Cover and shake for 20 seconds. Pour into a glass with the ice cubes. Serve immediately.
