From the Bee Keeper…
The Red Gums have been flowering beautifully in Western Australia and harvest time has begun!
Red Gum honey has a beautiful amber colouring with intense fresh fruit flavours that created by bees feeding on the blossoms of the magnificent Red Gum Eucalyptus found in the pristine forests of Western Australia.

Step one: Check honey stores
First, check that the honey is ready to harvest. All the frames in the hives should be full, and the honey should be completely covered with a white cap of wax.
Step two: Remove frames
The full frames are lifted from each hive and laid on a clean, stable surface. It is important to leave enough stored honey to feed the bees through the winter so some full frames are left for the bees.
Step three: Set up your space
The honey is removed from the frames using an extractor. The honey passes through a mesh strainer and into a collection bucket.
Step four: Removing the wax
When using an extractor, the frames need to be uncapped which means the white wax capping needs to be removed. This is done with a heated knife.
Step five: Extraction
The extractor spins and honey is sucked out of the frames by centrifugal force – it needs to spin very quickly to get all the honey out. From there, honey drips down the sides of the tank, then out through the opening at the bottom.
Step six: Drip and strain
Honey will start to drip down the walls of the extractor as soon as it starts spinning, but it won’t necessarily reach the collection bucket straight away. Eventually, the first drops flow from the tap and into the strainer on top of the collection bucket. The honey sits in the strainer at first, then it slowly drips through the fine mesh and into the collection jar. The honey is now ready for bottling.

INGREDIENTS
1 3/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 cups milk
2 large eggs
112 grams butter, melted
2 tablespoons creamy Fewsters honey
1 teaspoon vanilla extract
METHOD
STEP 1
Whisk the flour, baking powder and salt together in a medium bowl. In another bowl, beat the milk, eggs, melted butter, honey, and vanilla extract. Pour the milk mixture over the dry mixture and stir with a fork until just combined. Let sit five minutes to “develop” (just a fancy word for letting the baking powder activate).
STEP 2
Meanwhile, heat your waffle iron. Pour, or ladle, enough batter to cover about 2/3 of the surface (the rest will spread once you close the top). Most waffle irons have a handy light that goes on or off, signaling the waffles are ready. A sure sign of doneness is once you see all the steam has stopped shooting out.
