Welcome to the February issue of our Newsletter!
The beautiful Jarrah trees in the old growth forest of Western Australia are flowering and that means Jarrah Honey harvesting time!
So how do we harvest the honey and how do we know when it is ready to be harvested?
As soon as the honeycomb in the hive is filled with honey and capped with beeswax it is ready to be harvested. We regularly inspect their hives to see when the honeycomb can be removed. Once it is removed, we use a special knife to remove the wax capping before the honeycomb is placed in a honey extractor, which then spins gently depositing the honey.
There is little to no damage to the honeycomb using this process. We replace the honeycomb in the hives and the bees immediately set about removing any left over honey and carrying out repairs if they are needed, in readiness for a new load of honey.
The honey collected from the extractor is strained and left to settle to allow air bubbles to rise. The the honey is ready for bottling.

INGREDIENTS
FOR THE COOKIE:
½ cup Fewster’s Farm Honey
½ cup salted butter, room temp.
¼ cup sugar
¼ tsp. almond extract
1 ½ cups all purpose flour
½ tsp. baking soda
¼ tsp. fine sea salt
FOR THE HONEY ICING:
½ cup salted butter, room temp.
2 Tbsp. Fewster’s Farm Honey
1 ½ cups icing sugar
¼ tsp. fine sea salt
METHOD
STEP 1
Preheat the oven to 180 degrees and prepare two baking sheets with parchment paper. In a stand mixer combine the honey and butter and beat together on high for 5 minutes until light and fluffy. Add in the sugar and almond extract and beat on high for another 2 minutes. Add in the flour, baking soda, and salt and mix on low until fully incorporated and a dough forms.
STEP 2
Roll the dough on a lightly floured counter or board to your desired thickness of cookie. Cover the rolled doug loosely with plastic wrap and transfer onto a cookie sheet and allow to chill in the fridge for 1 hour.
STEP 3
Remove the cookie dough from the fridge and with a cookie cutter, cut cute Valentine’s Day shapes into the cookie dough. Place each cookie shape onto a parchment-lined cookie sheet and bake for approximately 8-10 minutes or until the edges are a light golden brown. Remove from the oven and allow to fully cool before decorating.
STEP 4
In the bowl of a stand mixer with the paddle attachment, cream the butter, honey, and milk together on high for 5 minutes until light and fluffy. Add in the icing sugar and salt and mix on low until combined. Turn the mixer up to high and allow to beat for 5 minutes until light and fluffy. Decorate the cookies with frosting and sprinkles.
