Beekeeping in winter…

Winter is the natural rest time for bees. They like to stay out of the cold and rain. Checking the bees intermittently and keeping them well-fed is a beekeeper’s most important job during the winter months.

Weatherwise, the much-needed winter rains will stand us in good stead for spring flowering and for the honey to start flowing again!

Bees are keystone species, meaning they play a vital role in preserving biodiversity and ecosystem health. Without bees, many ecosystems would be altered or cease to exist.
Globally, there are over 20,000 species of bee. Australia is home to around 2,000 species of native bee which have co-evolved with our unique native flora over thousands of years. The extinction of any one of these bee species could drastically affect some native plants, which could alter Australia’s unique ecosystems.
We need bees for biodiversity and ecosystem health.

INGREDIENTS
5 chicken marylands
200g haloumi, sliced about 2cm thick
3 lemons, halved
1 head of garlic, halved horizontally
2-3 large sprigs rosemary + extra to serve
FOR THE MARINADE:
2 tsp dried oregano
3 tbsp Fewster’s honey + extra to serve
¼ cup olive oil

METHOD

STEP 1
Preheat oven to 180C. Add the chicken skin-side-up, haloumi slices, lemon halves, garlic and rosemary to a large roasting dish (about 30-40cm) in a single layer.

STEP 2
Mix the marinade ingredients in a small jug then pour over the chicken and haloumi pieces. Season generously with salt and pepper and place in the oven. Roast for 40-45 minutes or until chicken is golden brown and juices run clear when pierced with a skewer. From about the 30-minute mark,
keep an eye on the chicken – if the skin and haloumi pieces are
taking on too much colour, cover with foil for the remaining
cooking time.

STEP 3
Serve with reserved fresh rosemary and a drizzle of honey.
