Australia is globally renowned for its world class honey. The Australian honey bee industry produces between 20,000 and 30,000 tonnes of honey annually and is one of the top ten honey producing countries in the world. Australian honey is highly regarded due to its diverse flavours, unique floral sources, and strong antibacterial properties.
Here’s a more detailed look at what makes Australian honey so good:
1. Unique Flavours:
Australia boasts a vast array of native flowering plants, resulting in honey with distinct and diverse flavours. The honey’s flavour profile is directly influenced by the specific nectar source the bees collect.
2. Antibacterial Properties:
The antibacterial properties are primarily attributed to the high levels of methylglyoxal (MGO) in the honey. Fewsters Jarrah Honey is considered to be one of the top healing honey’s in the world.

INGREDIENTS
FOR THE WINGS:
1kg chicken wings
1 tbsp reduced-salt soy sauce
1 tsp chilli flakes (optional)
2 tbsp Fewsters honey
1 lime zested and juiced
300g cooked rice to serve
FOR THE SLAW:
2 carrots
1⁄2 large white white cabbage
1 small red onion
1 tbsp olive oil
2 tbsp lime juice
15g coriander roughly chopped (optional)
METHOD
STEP 1
Tip the chicken wings into a large bowl and stir in the soy sauce, chilli flakes (if using), honey, lime zest and juice until the wings are coated. Set aside to marinate. Heat the oven to 210C/190C fan/6.
STEP 2
To make the slaw, use a vegetable peeler to shave the carrots into strips, then finely slice the cabbage and red onion with either a sharp knife or mandoline. Put in a bowl with the olive oil and lime juice, and season to taste.
STEP 3
Spread the wings out on a baking tray lined with baking parchment, then bake for 35 mins, turning halfway. Just before serving, stir the coriander, if using, through the slaw. Serve with the cooked rice.
