From the beekeeper…
October buzz…. Spring means action for beekeepers! Hives are booming, bees are preparing for the Jarrah flow, and beekeepers are busy keeping colonies healthy, preventing swarms, and getting ready for harvest. With nature awakening across Western Australia, our beekeepers are working to ensure this season’s honey is rich, pure, and bursting with the unique flavours of Jarrah Honey that only WA can offer.

Jarrah honey is prized for its high Total Activity (TA) — a measure of its natural antibacterial potency. Higher-grade batches (e.g. TA 30+) are considered medicinal grade, with properties that support wound healing, skin health, and immunity. This makes it not only a delicious natural sweetener but also a powerful wellness product trusted by health-conscious consumers worldwide.
One of the reasons Jarrah honey is so unique is its rarity. Jarrah trees (Eucalyptus marginata) are found only in the pristine forests of Western Australia, and they flower just once every two years. This limited flowering season means true Jarrah honey is produced in small quantities, making it far less common than other honeys. Its exclusivity, combined with its natural healing qualities, has earned Jarrah honey a reputation as one of the world’s most premium honeys.

INGREDIENTS
FOR THE HONEYED ALMONDS
1 cup almonds, sliced
2 tsp coconut oil (melted)
1 1/2 tbsp Fewster’s honey
1/8 tsp cinnamon
1/8 tsp salt
FOR THE SMOOTHIE
2 frozen bananas, broken in half
1 avocado, peeled and pitted
2 cups baby spinach, loosely packed
1 cup plain Greek yogurt
1 cup orange juice
1/4 cup Fewster’s honey
TOPPINGS (your choice)
1/2 cup strawberries, sliced
1/2 cup blueberries
Honeyed Almonds
1/2 cup Greek yogurt
additional honey for drizzling
		METHOD
STEP 1
Preheat oven to 150°C.Toss the almonds, oil, honey and cinnamon together until almonds are coated. Spread on a parchment lined sheet pan and sprinkle with salt. Bake for 20 minutes, tossing once halfway through, remove and let cool.
STEP 2
Blend all the smoothie ingredients in a blender until smooth and divide between 2 bowls.
STEP 3
Top each bowl evenly with the fresh fruit and some of the honeyed almonds, a dollop of Greek yogurt, and a drizzle of honey.
