Welcome to the August issue of our Newsletter!

In August, Australian beekeepers should focus on preparing for the active spring season. This includes checking hive health, ensuring adequate food stores, and managing potential swarm situations. With the queen beginning to lay eggs and the hive expanding, it’s crucial to monitor
for any signs of disease and ensure bees have sufficient access to water.
Key Activities for August Beekeeping in Australia:
Hive Checks: Inspect hives, especially for honey stores, as they may be low after winter.
Feeding: Supplement with sugar syrup if needed, especially if natural nectar and pollen are scarce.
Water Source: Ensure a readily available and clean water supply for the bees.
Comb Replacement: Replace old or damaged frames to provide space for brood and limit swarming.
Swarm Prevention: Monitor for swarm cells and take steps to prevent swarming, such as adding extra space or replacing frames.
Environmental Factors: Work hives on warm, sunny days when bees are most active and consider your neighbours needs when working with hives, particularly in residential areas.

INGREDIENTS
1/4 cup low-sodium soy sauce
3 Tbsp. honey
2 cloves garlic, minced
Juice of 1 lime
2 Tbsp. sesame oil, divided
1 tsp. Sriracha
1 Tbsp. cornstarch
500g boneless chicken breasts
Salt
Freshly ground black pepper
Sesame seeds, for garnish
Sliced green onions, for garnish

METHOD

STEP 1
Preheat oven to 180°C. In a medium bowl, whisk together soy sauce, honey, garlic, lime juice, 1 tablespoon sesame oil, Sriracha, and cornstarch.

STEP 2
Season chicken with salt and pepper. In a large oven-safe fry pan over medium-high heat, heat remaining tablespoon sesame oil. Add chicken and sear until golden, 4 minutes per side. Pour over glaze and transfer to oven

STEP 3
Bake until chicken is no longer pink, 25 minutes.

STEP 4
Spoon glaze over chicken and grill until caramelised, 2 minutes. Garnish with green onions and sesame seeds.
