Welcome to the June issue of our Newsletter!

From the Bee Keeper…

Winter has now arrived in the Southern Hemisphere and with it, the winter rains have started.

The warm autumn has kept the trees flowering, but the recent rains have been a welcome change.

We will see a decline in bee activity during the coming months as the bees hibernate for winter.

Bees are part of the biodiversity on which we all depend for our survival

1. Bees are needed for food security.
Bees are important to our livelihood as they help to pollinate most of the crops we eat and that our farm animals eat. Nearly two-thirds of Australia’s agricultural production benefits from bee pollination. But bee populations are under threat. Destruction of their natural habitat intensive farming practices, and pests and diseases are just some of the complex reasons driving a decline in both the number and diversity of bees. Without bees, our food security is at risk.
2. Bees are needed for biodiversity.
There are over 20,000 species of bee that exist globally and Australia is home to around 2,000 species of native bee. Native bees have co-evolved with our unique native flora over thousands of years. Some species of plant can only be pollinated by a particular species of bee. In the absence of pollination, the plant species cannot reproduce so if that bee species dies, so too will the plant. Without bees, biodiversity is at risk
3. Bees are needed for the health of our ecosystem.
Bees are keystone species that play a vital role in preserving ecosystem health. Bees provide essential pollination services for plants. Maintaining plant diversity supports other essential ecosystem services including helping to regulate climate, purify air and water, build soil and recycle nutrients. Without bees, ecosystems are at risk

BEST CHEESES:
Soft cheeses:
Brie, Camembert, Chevre, etc.
Blue-veined cheeses:
Gorgonzola, blue cheese, cambazola
Semi-firm cheeses:
Aged cheddar, gouda, gruyere, fontina,
smoked cheeses
Hard cheeses:
Manchego, pecorino, parmesan, aged
goat cheese
CHEESEBOARD EXTRAS:
Bread and crackers
Seasonal fruits
Selection of nuts, olives and pickles

Sprigs of herbs for decoration

CHOOSING THE COMPONENTS OF YOUR CHEESEBOARD

Cheese. Pick 3-6 different varieties, choosing soft, semi-firm and hard varieties.
Crackers or bread. Pick 2-3 varieties. Seeded crackers, a gluten-free cracker and a sliced baguette makes an excellent selection.
Fruit and Nuts. Pick 2-3 seasonal varieties of fruit and include at least one variety of nut. Place these in a bowl.
Olives. Include 1-3 varieties of olives in different colors and sizes.
Optional additions. Obviously we are fans of honey, but mustard and fig jam work well.

MAKING YOUR CHEESEBOARD

STEP 1
Place your selection of cheeses in different areas of the board or platter, spreading them out.

STEP 2
Add something salty or savory like a jar of olives, and a bit of texture, like spiced or roasted nuts and seeds.

STEP 3
Next add something sweet like honey – always a good option – as well as fruit preserves, fig jam or chutney.

STEP 4
Don’t forget good quality crackers and bread crisps

STEP 5
Tuck in greenery- sprigs of herbs or flowers!
